This cask bottling, distilled in August 2010 at Islay's Caol Ila distillery, spent eleven years maturing in a refill bourbon hogshead. It was bottled at cask strength in May 2022 at 58.3% ABV. Cask #314032 yielded 280 bottles.
Our tasting notes are as follows:
Color: Pale Gold
Nose: Sweet and smoky with a pleasing nuttiness and hints of pepper around the edges
Palate: Oily and briny with a little sugar cookie sweetness -- the oak is firmer than "refill" might suggest
Finish: Moderate to long with a spicy pepperiness

This powerhouse Islay distillery has a capacity of 6.5 million liters of alcohol per year with the bulk of that supporting Diageo's Johnnie Walker blends, especially Black Label. Known for its tall stills (that over look the Sound of Islay, or Caol Ila), gently angled lyne arm, and lower fill levels in the stills, the spirit, despite being peaty, can be exquisitely fruity and floral.
