Our tasting notes are as follows:
Color: Gold
Nose: Clean and crisp opening with pear skin, vanilla extract, and cereal sweetness to the front with a pleasantly floral, almost honeysuckle, sweetness behind
Palate: Wonderfully chewy with a honeyed, orange citrus that is pleasantly tart and oily with comforting malt and warm pepper
Finish: A delightfully waxy finish presents toasted coconut, candied caraway seeds, and warm cocoa butter
On the label: A seriously delicious drinker that is juicy and unctuous with sweet grain, floral accents, comforting malt, and warm pepper
Founded in 1987, the Cooley distillery is found in the foothills of the Cooley Mountains, in the northeast of Ireland. Using two column stills and two pot stills the distillery produces double distilled peated and non-peated single malts in addition to grain whisky.
Formerly independent the distillery was purchased by Beam Global in 2012 which, in turn, was purchased by Suntory in 2014. For obvious reasons, there is no "house style" to speak of in regards to Cooley distillery but their unpeated single malt is known for its creamy texture and malty flavors.
