This cask bottling of single malt Scotch, distilled in August 2012 at Speyside's Dailuaine distillery, spent 8 years maturing in a 1st fill bourbon hogshead before being accidentally moved to a 1st fill sherry hogshead to finish for 11 months. Cask #312989 was bottled in May 2022 and yielded 240 bottles at a cask strength of 55.1% ABV.


Our tasting notes are as follows:

Color: Ruby Red

Nose: Warm and sweet with toffee apples, fruit cake, fudge, unshelled peanuts, marzipan, and rich oak

Palate: Warm and nutty with toasted hazelnuts, more fruit cake, and more fudge. Pleasingly spicy with drying oak as it transitions towards the finish

FinishThe fudge just keeps coming with hints of pepper

On the label: Warm, rich, and nutty with toffee, fruit cake, and drying oak notes. A slam dunk of a dram for the sherried whisky lovers among us!

Founded in 1852, Dailuaine distillery sits between Ben Rinnes and the Spey not too far from the town of Aberlour. Equipped with a stainless steel full lauter mash tun, eight wooden and two stainless steel wash backs, and three pairs of stills the distillery has the capacity to produce 5.2 million liters of spirit annually but as recently as 2020 was running at just half that capacity. The 16 year old Flora & Fauna release is the only official bottling available from Diageo.
