This single cask bottling, distilled in May of 2008, spent eleven years maturing in a first fill bourbon . Cask # 588 was bottled May 2019 and yielded 290 bottles at a natural cask strength of 54.1% ABV.
Our tasting notes are as follows:
Nose: Warm caramel over baked pears, apple crumble (with a focus on the light brown sugar), new leather, a walk in humidor, after the first couple sips all sorts of fruits come out: casaba melon, starfruit, and passionfruit to name a few
Palate: Really rich and oily texture, delicate notes of browned pineapple, then the fruitiness amplifies: think moscatel grapes, even cotton candy grapes, honey dew melon, and hints of guava. As we near the finish some more delicate floral notes come out: think chamomile tea.
Finish: Long and peppery, caramel and brown sugar return then slowly fade away
On the label: Warm and richly flavored with scents of baked pears, brown sugar, and new leather. The fruits then get a bit more tropical. An oily texture supports the flavors of pineapple, cotton candy, and guava. The finish is long and peppery.
