This cask bottling, distilled in August 2008, spent seven years maturing in a refill ex-Bourbon hogshead. It was bottled at cask strength in August of 2015 at 57.8% ABV. Cask #613-2 yielded 235 bottles.
While we can not name the distillery for this release, we can divulge that this whisky is not from the same distillery that produced our previous Undisclosed Islay 7yo. We believe this whisky was produced at Islay's powerhouse distillery located near Port Askaig. However, the paperwork with the cask gave us nothing more than the distillation details, cask type, and the words "Islay single malt Scotch whisky."
Our tasting notes are as follows:
Color: Golden honey
Nose: Black peppercorns, chipotle peppers, quite gamey, spicy ginger, pepperoncini, subtle lavender, subtle sea spray
Palate: Wonderfully oily texture with abundant char, roasted game, raisin bread sweetness, and walnut oil
Finish: Moderate with sweet peat, salted caramel, fresh cracked black pepper and, interestingly, dried blueberries
On the label: This peat monster hides beneath a bed of lavender flowers and burnt sticks - oily and soft but with a darkness lurking just beneath the surface
